Is there anything better than cutting into a perfectly ripe avocado? I’ll just answer that with a solid no. Probably because there is such a short period of time between the avocado being under and over ripe. That special moment you actually get the timing just right, slice the avocado in half, and see the perfectly even creamy green is always magical. So glorious.
This recipe, if you can even call it a recipe, is super simple and ultimate in flavor and nutrition. Just the way I like it. I think I enjoy cilantro and basil equally as much atop the toast, so whatever is fresh, available, or your preferred herb, go for it. I like to use a sourdough for the base, but whatever bread you have on hand will do.
Perfect Avocado Toast
Ingredients
- sourdough bread
- ripe avocado
- grape tomatoes
- lemon juice
- cilantro basil works too
- salt & pepper
Instructions

Slice (if not pre-sliced) and toast the bread to your liking. (When I use soft pre-sliced bread I usually toast it a little more than I do when I use sourdough.)

Cut the avocado in half. Carefully remove the pit. Remove the avocado meat from the skin and either slice or mash the avocado onto the toast.

Next, half or quarter the grape tomatoes and lay onto of the avocado.

Finally, squeeze some fresh lemon juice on top, throw on some fresh herbs, and salt and pepper as pleased.
