I couldn’t resit buying the large organic watermelon from the market this week. When I got home and started cutting into it, I realized – WOW – I had A LOT of watermelon for just myself…and it was bound to be a g o o d week. I have been starting my morning with this super refreshing herbed watermelon juice and loving every sip. It is so simple and perfect for the warmer days ahead.
Watermelon is amazingly hydrating, has vitamins – like A & C – that are great for skin and hair, AND can even help protect against sunburn! Lime juice helps prevent cancer and boosts immunity. And don’t even get me started on the health benefits of cilantro and mint…so many healing properties. Cilantro can help lower anxiety, and mint does wonders for digestion, energy, and can even help relieve headaches! Cheers to that!
Herbed Watermelon Juice
Ingredients
- 4 cups watermelon
- cilantro fresh
- mint fresh
- the juice of 1 lime
- 1-3 cups ice I usually use 1 cup - add more ice for more of a slushee texture
Instructions

Add all ingredients to a blender and blend on high until it reaches your desired slushee or juice consistency.
