Berry Beet Salad

Ingredients

  • 1 bowlful dark leafy greens spinach, beet greens, spring mix
  • 2-3 roasted beets chopped
  • 2 handfuls mixed berries blueberries, strawberries, blackberries
  • 1-2 handfuls sunflower seeds
  • 1/4-1/2 avocado sliced
  • 2 tablespoons balsamic or red wine vinegar
  • 1 teaspoon agave nectar or maple syrup
  • 1 tablespoon pumpkin seed oil or other oil
  • a pinch of pink himalayan salt
  • a crack of fresh cracked black pepper

Instructions

Roasted Beets

  1. Preheat oven to 375 degrees Fahrenheit. Rub a little oil on the beets, place wrap in aluminum foil, and roast in the oven for 45-60 minutes. Once cool, remove skin and chop. 

Balsamic or Red Wine Vinaigrette

  1. Whisk the vinegar, nectar, oil, salt and pepper together. Modify to taste. 

Assemble all ingredients in a bowl and ENJOY!
