Bring a cup of water to a boil. Once boiling, turn off the heat and add the dates. Let soak in the hot water for 10 minutes or so, until soft. Strain.
Add the soft dates to a blender along with the coconut cream, nectar, vanilla, and salt. Blend on high until smooth. If you have a large blender, you may have to scrape down the sides a few times to get the ingredients well incorporated and smooth. Remove the date caramel from the blender and place in a bowl or ramekin.
Using a melon baller, dig into the apple making little apple balls.
Stab the center of each apple ball with a stick.
Dip the apple in the caramel and then in the chopped peanuts. ENJOY!
